Milk Cake, or Kalakand, is a popular Indian sweet made with milk. Here's a simple recipe:
Ingredients:
- 1 liter full-fat milk
- 1/4 cup lemon juice or white vinegar
- 1/2 cup sugar (adjust according to taste)
- 1/2 teaspoon cardamom powder
- A handful of chopped nuts for garnish (optional)
Instructions:
- Boil the milk in a heavy-bottomed pan. Once it comes to a boil, add lemon juice or vinegar to curdle the milk. Stir continuously until the milk solids separate from the whey.
- Once the milk solids have separated, strain them using a muslin cloth or a fine sieve. This is called chenna or paneer.
- Now, take the chenna and knead it well to make it smooth.
- In a non-stick pan, cook the chenna on medium heat, stirring continuously to prevent it from sticking to the bottom.
- Add sugar to the chenna and continue to cook. The mixture will start to thicken.
- Add cardamom powder for flavor and continue cooking until the mixture leaves the sides of the pan and becomes a thick, cohesive mass.
- Transfer the mixture to a greased plate or tray and flatten it with a spatula.
- Allow it to cool for a few hours. Once it has been set, cut it into squares or diamond shapes.
- Garnish with chopped nuts if desired.
