Milk Cake, or Kalakand, is a popular Indian sweet made with milk. Here's a simple recipe:

Ingredients:

  • 1 liter full-fat milk
  • 1/4 cup lemon juice or white vinegar
  • 1/2 cup sugar (adjust according to taste)
  • 1/2 teaspoon cardamom powder
  • A handful of chopped nuts for garnish (optional)

Instructions:

  • Boil the milk in a heavy-bottomed pan. Once it comes to a boil, add lemon juice or vinegar to curdle the milk. Stir continuously until the milk solids separate from the whey.
  • Once the milk solids have separated, strain them using a muslin cloth or a fine sieve. This is called chenna or paneer.
  • Now, take the chenna and knead it well to make it smooth.
  • In a non-stick pan, cook the chenna on medium heat, stirring continuously to prevent it from sticking to the bottom.
  • Add sugar to the chenna and continue to cook. The mixture will start to thicken.
  • Add cardamom powder for flavor and continue cooking until the mixture leaves the sides of the pan and becomes a thick, cohesive mass.
  • Transfer the mixture to a greased plate or tray and flatten it with a spatula.
  • Allow it to cool for a few hours. Once it has been set, cut it into squares or diamond shapes.
  • Garnish with chopped nuts if desired.
