Here is a simple recipe for Mutton Biryani:

Ingredients:

  • 500g mutton, cut into pieces

  • 2 cups basmati rice, soaked

  • 2 onions, thinly sliced

  • 2 tomatoes, chopped

  • 1/2 cup plain yoghurt

  • 2 tbsp ginger-garlic paste

  • Whole spices (cinnamon, cardamom, cloves)

  • Mint leaves

  • Coriander leaves

  • Green chillies

  • Ghee/oil

  • Salt to taste

  • Biryani masala

Instructions:

  1. Marinate the mutton in yoghurt, ginger-garlic paste, salt, and biryani masala for at least 1 hour.

  2. In a large pan, heat ghee/oil and add the whole spices.

  3. Add sliced onions and sauté until golden brown.

  4. Add marinated mutton and cook until it is tender.

  5. In a separate pot, cook the soaked rice until it is 70% cooked.

  6. Layer the partially cooked rice over the mutton in the pan.

  7. Add mint leaves, coriander leaves, green chillies, and saffron-infused milk on top.

  8. Cover and cook on low heat until the rice is fully cooked and the flavours have melded together.

  9. Serve hot with raita and enjoy your flavorful Mutton Biryani!
